Raw honey is a mix of glucose and fructose sugars, which crystallise around the remaining pollen grains in the honey, sealing in unique, wonderful natural flavours.
If your honey crystallises, you can melt it, and it will remain liquid at room temperature for a couple of months!
We are often asked what the difference is between raw and runny honey sold in supermarkets.
Runny honey only stays this way due to the heat and filtration processes it goes through, which sadly removes a large amount of the good stuff!
The result is a large quantity of the honey available is of poor quality and is highly processed and produced from large bee factories where the bees are solely fed glucose syrup.
